'Cleanoa eating' - a new clean quinoa recipe

Sweet Potato and Spinach Quinoa curry (V).

Hello there! In the previous recipe I made a quinoa salad. Well what if you don't want a salad, but want a main dish that gives you all your 5 a day, is protein packed, full of complex carbs, suitable for vegetarians and tastes delicious?

If you're looking any or all of the above, look no further than this simple, one pot recipe below!

Recipe: Serves 3

Ingredients:

- 2 large sweet potatoes

- 3-4 cloves of finely chopped garlic

- 1 bag (120g) of spinach)

- 1 cup of quinoa

- 50g cherry tomatoes

- 300g from a 400g can of coconut milk

- 1 cube of vegetable/chicken stock

Spices

- 3 tbsp turmeric

- 3 tbsp curry powder (choose your spice level)

- 1 tbsp chilli powder

- 1 tbsp ground cumin

- 1 tsp ground ginger

- salt and pepper to taste

Method:

1. Wash the spinach, cherry tomatoes and quinoa separately, then drain.

2. Finely chop the garlic and cherry tomatoes

3. Chop the sweet potato in bite size chunks (you can heat it in the microwave for 2 minutes to soften it for easier cutting and cooking)

4. In a pot (I used an ceramic pot), heat 2 tbsp of olive oil and add in the garlic, sweet potato, chopped tomatoes, spices, vegetable/chicken stock and the coconut milk.

5. Once this comes to a boil add in the quinoa.

6. Bring the mixture down to a simmer. The curry will take around 30 minutes to cook, but keep stirring every 3-5 minutes to avoid the quinoa sticking to the bottom of the pan.

7. When the quinoa appears fluffy (around 25 minutes), give it a taste test. Add in whatever you feel it needs more of e.g. I usually add more curry powder and coconut milk from the can.

8. Once you've achieved your desired taste, chuck in the spinach and give it a stir.

8. When the spinach wilts to your desired texture, take the quinoa curry off the hob and let it settle for 3-5 minutes.

9. Serve on a plate and drizzle with any leftover coconut milk for consistency!
